Don’t be alarmed at what seems like a mountain of spinach in the beginning – it all wilts down to create a rich, tasty balti saag curry (spinach) which can be made with juicy tender lamb or chicken. One serving of this will probably give you more greens than most people would have in a whole week!

Although this dish is made medium spice, It can be made mild and creamy for those with the timidest palates. The added cream cook’s through the spinach creating an amazing mild sauce. But hot spicy lover’s do not look away as this dish can easily be made fiery so if your craven for a bit more heat, a sprinkle of freshly chopped green chillies will do the job. The additional chilli also tastes great. Just be a bit careful so that the chillies zing rather than zap your tongue.
